Tim’s passion for wine began thirty years ago while he was living & working in Heidelberg, Germany. Tim credits his time in Germany as the turning point in his life. Not only did it instill in him a love of fine food and wine, it also taught him hard work and a strong regard for the importance of true service. After leaving Europe, Tim returned to the U.S., where he spent the next 30 years working in the wine and hospitality industries, culminating in the start of Mac Wine Cellars in 2015 and the opening of our tasting room and bottle shop in 2017.
Petra & Tim metwhile working together in Heidelberg, Germany. As much as anyone, it was Petra and her family who taught Tim about food, culture, and a distinctly Europe perspective towards life. Petra herself has over 15 years of experience in the restaurant industry, including stints at some of Chicago's most trendy restaurants of the mid to late nineties. She is less of a "wine geek" than Tim is, but has a nose and palate that would be the envy of many sommeliers. In fact, it is Petra who is often the final arbiter of any wine we choose, especially when Tim is on the fence. Our club wines are called Tim's Picks, but in reality, they are a team effort between the two of us.
Drew spent the formative years of his winemaking career at Domaine Serene and Shea Wine Cellars where he worked with some of the best vineyard sites in the Willamette Valley. In addition to making wine for Mac Wine Cellars, Drew also consults for a number of other wineries in the Willamette Valley and produces wine under his own label, Harper Voit. Drew believes in seeking out great vineyard sites, beautifully farmed fruit, and long-term relationships with growers.
